Restaurant Quality Mediterranean Chicken Salad

Hey Everyone!

Hope you all had a great Presidents Day weekend… Brett and I were pretty mellow. Workouts, laid out Saturday by the pool before the weather cooled down, I went for a hike… It was great to have some free time even though I worked Friday and Monday.

On Saturday when Brett and I were on our way to lay out at a friend’s pool, we stopped at Pita Jungle in Newport to grab some lunch. We both ordered the Mediterranean Chicken Salad. They were huge! We probably could have split one and shared some hummus, but they were delicious!

Last night I decided to head over to Sprouts for some veggies for dinner. I couldn’t decide what the heck to get, so I flipped through my camera roll on my cell phone and saw the pic I had taken of our salads from Pita Jungle. I was able to get most of the ingredients I could remember having, and making a version at home.

*Note: I did forget the feta cheese, peeled and chopped cucumber, and tomato, but your could easily add it to this recipe if you want.

Ingredients:
1 big handful of chopped curly leaf parsley
1 large sweet corn, boiled and kernels cut off
1/3 cup wild raisins
1 bell pepper chopped
1/2 red onion chopped
1/2 bag mixed salad greens
2 chicken breasts or 4 chicken strips (fresh)

Dressing
1 part White Pear Vinegar (or white wine works)
2 parts EVOO
2 tsp Lime juice
1 tbs Dijon mustard
1 tsp sugar
1 tsp cracked pepper

Start by putting a pot of water onto boil for the corn. It should take about 8 minutes for the corn to cook.

Once you have cleaned the chicken, season it. I like Tyler Florence’s Sun Dried Chili Rub, some ground cumin, salt, and pepper. You could also do a curry seasoning if you prefer. I cooked my chicken strips in a bit of EVOO on the stove in a skillet. It took about 15 minutes on medium heat.

Once you put the corn in, grab a measuring cup and combine your ingredients for the dressing. Whisk until combined and set aside.

While the corn and chicken finish up, grab a big salad bowl and start adding in ingredients. Chop and add the onion and parsley. Pour in a bit of the dressing so the onion mellows out a bit.

Chop up the bell pepper and throw it in the skillet once you take the chicken out. Just for a couple of minutes, so the bell pepper soaks up some of that chicken flavor, and loses some of that “bell pepper bite.” Let the chicken rest while you grab the corn and throw it in an ice bath to cool down.

Add the cooked bell pepper to the salad bowl, as well as the raisins. Shave and add the corn. Then chop the chicken and add it too. Toss these ingredients, and then add the salad greens and remaining salad dressing to finish.

When plating, try to get the salad greens on the bottom, so all the other delicious ingredients are shown. Top with feta cheese if desired and serve!

This recipe takes about 25-30 minutes at home, but the result is a restaurant quality salad dinner that is both delicious and beautiful! It has all of the components of a balanced meal: protein, starch, and veggies.)

I hope you will give this a try! Double the recipe if your cooking for more, and don’t forget to taste your food along the way! If the dressing is too bland or oily, add more mustard and lime juice. If its too sour or has a bite, mellow it out with a dash of sugar.

Grilled Sirloin Steak & Endive Salad with Jalapeño Lime Vinaigrette

Hey Everyone!

I made this salad the other night after Brett and I went grocery shopping and it was Delish! Had to share… Endive can be a bitter lettuce, but if you pair it with something sweet or savory, it’s really yummy! It made a great dinner salad that was both filling, and light. Here’s what you’ll need for 2 people:

Dressing:
1 minced jalapeño
1 lime
1 part rice or white wine vinaigrette
3 parts EVOO
1 tsp minced garlic
1 pinch salt & fresh cracked pepper
1 handful of finely chopped Cilantro
1 tbs of sugar

Other Ingredients:
1 red endive
1.5 sirloin steaks
Pepper
Salt
Garlic powder
Steak rub (preferably something with paprika and chili powder)
Shaved Parmesan

*I roasted 1 pack of grape tomatoes, but found we could have done without it…

Start with the rub for the steaks, add some salt and pepper. *For the best sear, lie the steaks between some paper towels and press, to remove excess liquids.

Brett grilled the steaks to medium rare while I worked I worked on the lettuce and dressing…

Wash the endive, an then cut the end of of the bunch. Once you’ve decided how much lettuce you want, cut the white vein out of the leafs. You can also leave the veins and chop the endive if you like a tossed salad:)

Plate the lettuce, and get out a mixing bowl for the dressing. This was the first time I have made a jalapeño vinaigrette dressing, but it won’t be the last! I originally bought the jalapeño and the lime for tacos later in the week, but after getting started in the kitchen, I realized the jalapeño ranch dressing we have in the fridge would be too heavy, do I made this yummy option instead! It’s so easy… Just whisk all the ingredients together like a mad man (or woman) until things start to emulsify… This dressing will only mesh temporarily, so you may have to whisk it up again before pouring on the salad.

Once the steak is done (usually about 12-15 minutes on the grill), let it rest for a few minutes before slicing it so the juices don’t bleed out…

Then slice the steak and plate it on top of the lettuce. Or, toss chopped lettuce in some dressing, plate, and top with the sliced steak.

Pour remaining vinaigrette over the steak, add cracked pepper and shredded Parmesan. Then dig in!

I love experimenting and then coming up with new dish ideas along the way… I could totally see tacos!: warm flour tortillas, broccoli slaw or cabbage, steak or ground chicken, and that amazing jalapeño lime vinaigrette all over the meat and slaw:) k my mouths watering, gotta stop! Lol.

Half the fun was watching Julie and Julia while we ate and having my husband say: “This movie was made for you. It’s like… your bible movie.” LOL!!!

Late Dinner Option @ Old Vine

Hey Guys!

I don’t know about you, but I always struggle with nights out and getting ready on time. I love our date nights, but I often have trouble getting ready in time and prioritizing what time we need to be somewhere… I should really keep a clock in the bathroom, lol!

Tonight we had plans with a couple who unfortunately wasn’t able to meet, so we ended up having dinner with just the two of us… Don’t get me wrong, I was still ecstatic, but I did take too long in the bathroom when I learned there wasn’t a time restraint…

Once we got in the car we settled on dinner at The Camp: a local shopping center with restaurants near Memphis in Costa Mesa. I love the creative menu they have, but it’s one of those places where you need to read the descriptions, or you’ll end up getting something you didn’t expect. Take Brett’s choice for example: He ordered the Cajun Shrimp, but it didn’t come with sides, so he was still hungry… Luckily, we went for drinks at Memphis, do he ordered their gumbo to fill up.

I ordered the Old Vine Salad and had a glass of the paired wine, it was great and just what I wanted for dinner at 8:30 at night. Since I’ve been listening to Bethenny Frankel’s The Skinny Rules on audio tape, I’ve had a real revelation about portions and being naturally thin. If you haven’t read it, I’d recommend reading it, or getting it on Audiobooks… It puts portion control in perspective, as well as how to enjoy all food without overindulging. My dinner was great and filling, without being too much! Here’s what it looked like:

Yum! So good! I still left a few bites to share with Brett, & we ended up meeting a couple close friends (Dustin & Steph) at Memphis, for some great conversation! Love girl time:)…!

Healthy Grilled Chicken With Roasted Broccolini & Grape Tomatoes

Hey Everyone,

Just made a trip to Sprouts for the week and thought I’d share this easy to make dinner with you all. I bought some broccolini and had some grape tomatoes in the fridge. I didn’t want to spend 30 minutes cooking the chicken so I used the frozen grilled chicken breasts we buy every week from the local grocery store. Here’s what you’ll need:

Ingredients:

•4-6 oz grilled chicken
•1 small bunch of broccolini
•10 grape tomatoes cut in half
•Balsamic vinegar
•EVOO
•Salt & pepper
•Mrs Dash garlic & herb seasoning
•Fresh grated Parmesan

Directions:

-Preheat the oven to 400
-Add broccolini and tomatoes to a roasting pan. (I line mine with aluminum foil for easy clean up.)
-Drizzle the veggies with balsamic and EVOO.
-Sprinkle salt & pepper
-In a microwave safe dish, add frozen chicken and the garlic & herb seasoning
-Cook the veggies for 8-10 minutes until the tomatoes start to brown.
-Microwave the chicken for 3-4 minutes
-Plate the dish and garnish with a bit of Parmesan cheese.

That’s it! Super easy and yummy! I made some extra lean ground turkey and friend rice for meals this week too. Give it a try and let me know what you think:)

Shaved Vegetable Salad

Carrot / turnip / fennel / radish / radish / red onion / blue cheese / pears / walnuts

I asked for goat cheese instead of blue cheese and it was amazing!!! I definitely recommend it!

Oh and if Dustin is working: ask for a Cucumber Mojito!

Hey Guys,

Nothing is better to me then getting together with loved ones. For those who don’t already know, my younger brother Alex got married last weekend and is heading back to Hawaii tomorrow so I snagged his only available night to host dinner at our place. What started as shrimp pasta turned into a feast once my dad showed up with 2 grocery bags worth of meat and veggies lol. We cooked most of it an created a spread that left you feeling like its Thanksgiving. Good thing we are running a half Marathon in the morning:) here’s what made it on the menu:

•filet mignon
•prosciutto wrapped shrimp pasta
•grilled asparagus
•broccoli and mushrooms tossed with goat cheese
•garlic bread

Dessert will be pumpkin shakes and vanilla and orange bread from the Frenches Bakery down the street:) Going to miss my lil brother like no other and hate to see him go, but so happy we could get together and share this meal and some laughs:)
