Thought I would post some easy to make salads that I love!
The first is a quick tuna salad. It’s perfect if you want a healthy lunch that doesn’t tie you down after…
Ingredients:
2 cans light albacore tuna
1 sliced celery stock, 1tbs light mayo
1tbs dijon or honey mustard (depending on your taste), salt & pepper
a squeeze of lemon juice
an occasional tsp of relish:) yum!
This next one takes a little time but is delicious and is a good way to surprise your friends with something they wouldn’t normally have…
Warm Beet and Arugula Salad
Ingredients:
2 beets boiled until easy to stick a fork through, peeled and diced
1 bag of arugula salad
1 container of crumbled goat cheese
Dressing: 2tsp balsamic vinagrette, 2tsp E.V.O.O, 1tsp lemon juice, salt & pepper
Tip: have the dressing and salad in a big bowl ready to put the warm beets in, add the goat cheese and toss lightly. serve immediately
The third is another quick recipe and probably the be Brett and I put together most often… This Chicken Salad is perfect for a light dinner or a Sunday when you’re not as likely to run to the gym:) so good!
Ingredients
Precooked chicken strips
Romaine lettuce
Jalapeño ranch dressing
Croutons
Pepper
We usually get the big frozen bag of pre-grilled chicken strips because they are so fast. Place the chicken in a micro-safe dish for about 3 min. to defrost the meat and then finish it in a saute pan with some salt and pepper. Toss about a tablespoon of the dressing with the chicken before you put the chicken in your salad bowl with the other ingredients. Try to find a light version of the dressing if you want to keep the calorie count down. Toss the salad and top with some shredded Parmigiano Romano cheese. 🙂
