Happy 4th of July! I thought I would share some food ideas for inspirational cooking today with the red, white, and blue theme in mind…
How about we start with breakfast?! Pancakes with fresh berries:)
Want something lighter? How about a ruby red beet juice drink? Just run 1 large red beet, 4 large carrots, 1 gala apple and 3 handfuls of spinach through the juicer and enjoy!
I haven’t had the chance to try this yet, but the idea of green eggs popped in at some point, so I thought it would be fun to add a splash of fresh beet juice to your scrambled egg mixture before cooking:) if your eggs tend to brown in your pan, you could put them in a bowl or plate and microwave them for a minute for bolder color:) could be fun!
Lunch makes me think of strawberries, in particular the spinach and strawberry salad I had at Finbars Italian Kitchen a couple weeks ago. This would be do easy to throw together with some strawberry or champagne vinaigrette…

When I think desserts, I’ve got 2 ideas that are similar. One more involved with a bigger wow factor, the other very easy to throw together. Both involve Angel Food Cake, which is one of the healthiest cakes you can go with! Sugar free options tend to be dry and heavier so you’ll want to keep that in mind. With the simple recipe, I combine cold soy or almond milk with honey and drizzle it over sliced pieces of the cake late out on a platter, instead of a heavy sauce or whip cream. Then pour on sliced strawberries and blueberries. Very pretty:) you can use an ice cream scoop and add lite cool whip for a whip cream substitute also.
