After making a run to Sprouts yesterday, I’ve decided to start playing with some recipes and flavors to find some yummy combinations. This one was inspired by those smoothie bowls they have at places like Juice It Up. Although they are delicious, the ones at Juice It Up are anywhere from 690-780 calories! And that’s before the toppings… That just doesn’t work for me. I brought out what I had and put it on the counter. Here’s what I threw in the blender…
6-8tsp coconut meat
3/4 cup frozen berries
1tsp light agave or 2tsp Splenda
1tbs almond butter
3/4cup unsweetened almond milk
Pinch of coarse kosher salt
Throw it in a blender until frozen berries have broken apart. If it looks to thick, add a bit more almond milk. If its too runny, you can add a tsp more of the coconut meat. Empty it into a bowl and top with granola/seed mix. It has less then half the calories of this other bowls… We are talking under 400! It fills you up, the dehydrated coconut meat I used really gives bulk to the smoothie bowl and the granola keeps you munching… Try it and let me know what you think:)
