No lunch meeting means I can run home and fix a lunch instead of finding a drive thru. Luckily, Brett was able to meet me at the house:) We usually look in the fridge for packaged leftovers, but I wanted to see if I could whip up something new after Brett put all that work in for Valentines Day yesterday:) This salad may not be the prettiest one I have photographed, but it’s a yummy warm salad, perfect for chilly days when bread isn’t you’re friend or you had too much chocolate like I did yesterday:) don’t worry about dressing, you’re making your own for this one!
•1-1.5lbs grilled boneless skinless chicken breast strips (we get a frozen bag from the grocery store every week for quick meals like this)
•1 chopped head of romaine lettuce
•1 large mango
•1tbs fresh basil paste or small handful of chopped basil
•2 tsp lime juice
•1 can washed and drained black beans
•1 diced jalapeño without seeds (optional)
•salt and pepper
•1 tsp minced garlic
•1 shaved carrot
Peel and cut one mango. Approximately 2/3 is diced and put in a bowl with washed black beans, carrot, and jalapeño.
Set oven to broil. Cover a baking or roasting pan in foil and add lettuce. Drizzle olive oil, salt and pepper. Broil for 5-7 min until edges begin to char.
Add remaining mango, basil, lime juice, salt, pepper, and garlic in food processor and purée. Drizzle olive oil while food processor is running… About 2 tbs. add a bit more lime juice… If it tastes like it needs some balance, you can add a dash I sugar or a splash of rice wine vinegar. Just be careful with the vinegar… Too much can overpower the mango.
Microwave the grilled chicken strips on hight for 4-5 minutes until hot.
Combine bowl of mangos and beans with the purée and chicken. Plate on duh with lettuce and eat up!
*a chopped avocado would have been great with this but we were out. If you have one add it at the end in the bowl and gently combine the ingredients. You don’t new to add sugar for balance if you have the avocado. It will balance the dressing on its own:)
