Hey Everyone,

Hope y’all had a great Friday! We have had people working on the house the last few days and can already see a huge improvement! I can’t wait to see the finished product:)
I took a trip to Trader Joes earlier this week to stock the freezer for meals we could use when needed. With all the progress it made it a perfect night to use the BBQ and make dinner. I bought the Peppered Pork Tenderloin, some frozen pearl onions, and butternut squash risotto. It’s so easy to heat up. The tenderloin took about 40 minutes on the BBQ on medium heat, and I made a side salad with the following ingredients:

-1 handful of Arugula
-1 chopped bunch of Romaine lettuce
-Champagne Vinaigrette
-chopped walnuts
-1 cup blueberries
– fresh cracked pepper

So yummy! I sautéed the onions in BBQ seasonings and low fat milk. Sprinkled some tarragon and viola!
