There are so many ways to refresh leftovers. Here’s a dinner idea to go with the “friend rice” idea.

Marinade for 2 boneless skinless chicken breasts or 3 thighs

Salt n pepper
2tbs Olive oil
2tsp Minced garlic
1squeeze lemon juice
1tsp Basil
1/4 cup veggie or chicken broth

Line pan with aluminum. Cover chicken and bake at 350 for 25 min.

I served mine with horseradish and a dollop of Dijon mustard.
