Yesterday was kinda muggy so I pulled the slow cooker put in the morning and started looking up some recipes. The Pioneer Woman has some great soups do I took inspiration from her Spicy Corn Chowder and added some tweaks for a great and filling corn chowder that anyone can do! Here’s what you’ll need:
- 6 corn husks shaved
- 1 Newcastle or other beer
- 2 tbs all purpose flour
- 1 yellow onion diced
- 3 celery sticks diced
- 3 large carrots diced
- 1 lg can Veggie broth
- 1 1/2 cups cream or low fat milk
- Salt and pepper
- 1 small can chipotle peppers
- 4 minced garlic cloves
- 1 tbs fresh basil
First, get out a large skillet and heat to medium. Add half the garlic and the onions. Sauté until translucent and then add the celery and carrots. Sauté 5 or so min and then add 1/2 the beer w the flour and let reduce.
Add the ingredients to the slow cooker and set on high for 2-3 hrs
Add corn, remaining garlic and dry seasonings. Then pour in the broth and stir.
Once the 3 hrs is up set the cooker to simmer or low until almost dinner time. The house will smell delicious!
About a half hour before service, scoop a few cups of the soup into a blender. Add 1/3 of the milk or cream and purée. Pour the soup back in the slow cooker an add remaining milk or cream.
Switch the slow cooker to low and serve when ready! It’s so good and lasts in the fridge for days after if need be. A must try for a cold day!
